I am so happy with these easy peanut butter cookies that I just had to share!
Often with gluten free cooking, one finds recipes that call for some lengthy combination of rice, tapioca, soy or potato flours plus corn starch, potato starch or arrowroot starch and guar gum xanthan gum and… so on and so fourth.
So when I heard this recipe called for just 3 ingredients I wasn’t so sure it would make a great cookie, but it does.
If you like your cookies chewy and moist inside cook a couple minutes less, like your cookies crisper flatten slightly more and cook a couple minutes more.
Flourless Gluten Free Peanut Butter Cookies
Preheat over to 350 degrees
Mix together 1 cup packed brown sugar, 1 cup creamy (gluten free) peanut butter…Jif for example.
In separate bowl slightly beat one egg. Add to peanut butter sugar mixture. Mix until well blended.
Use spoon to place balls on cookie sheet or roll silver dollar sized balls by hand. Flatten with a fork.
Cook 10 to 12 minutes or until edges begin to brown. Cool.
Optional: Melt gluten free chocolate and drizzle over the cookies or place chocolate kiss in middle of cookie ball prior to cooking.
