Our daughter was diagnosed celiac back in 2007 - when she was just 18 months old.

We were referred to several different specialists and still could find no explanation.


Weeks were dragging into months...


The most common suggestion was, try putting her on a B.R.A.T. diet for four weeks and see if that helps…


...or ‘try taking her off dairy for a while’.


Nothing worked


Meanwhile, she had not grown since 12 months...she weighed less and less...


We were desperate.

 

Then we got a referral to a gastroenterologist at Children’s Hospital…


After one quick appointment, he suggested some ideas of what the problem could be and that we needed to schedule an endoscopy right away.


A week later I was holding my daughter as they put her “to sleep” to do the endoscopy. 


They wheeled her away…


Tears dripped down my cheeks...I was scared about my little girl going in for a procedure which we knew nothing about…


We wandered aimlessly around the hospital.


An hour later we had her back in our arms…


The gastro doctor had already seen what he suspected...the little villi in her small intestine were flat as a pancake...meaning she could not absorb nutrients from most of the food she ate…


The symptom of an autoimmune disease we had never heard of ...


Celiac Disease


The cure? Put her on a strict gluten-free diet and come back for a follow up in 6 months.


We left with a folder full of documents explaining celiac disease and how to eat a gluten-free diet…


I felt good for the first time in months just knowing that we had an answer...a real diagnosis...and that the cure was not chemotherapy or pills or injections…

Before We Go On...


...Let me introduce myself. I’m Jim Shirley.


My wife Karen and I decided a few weeks after our daughter’s celiac diagnosis to go gluten-free as a family...and we’ve now been GF since early 2008!


Remembering back to that time...it was relieving to know that all we had to do was change her diet...


However, it was not so easy to make the transition to gluten free.


For one thing, gluten-free was not really a hot topic yet...so that meant we had to order online or actually check the GF status of foods we bought.


We had no idea what we didn’t know 


Soon after you discover that when you have a question...it’s not clear who to ask for advice! 

 

Even the nutritionist didn’t have answers because they weren’t used to working with gluten-free kids.


We struggled…


Fortunately, our daughter was a toddler, so the variety on her menu was relatively small at first…


What gluten-free foods we did find were not always appealing...Our GF pasta kept turning out mushy and starchy…


There were no GF breads worth the price…


And while we had done a fair amount of cooking and baking in our lives to that point, getting gluten free recipes to turn out right was a battle.


It seemed like our only option was to settle for this new life...


Settle for decent meals...settle for being cautious and less social.


It was painful after we spent so much of our lives loving food and trying new meals and being social around food...


But then something clicked...


We decided we wanted better…


So we put our heads down and started working out ways to make this gluten free thing the best we could make it…


My wife started keeping track of the foods that we found were gluten-free…


I started our blog and we wrote about our findings as we went along...as a sort of way to keep track of things and share it with others.


We got better at cooking and parties and being social again…


And we had some fails along the way too...like being too trusting of wait staff who seemed like they knew what we needed…


...but things were getting easier. We no longer felt that sense of helplessness we had when it all started.


By 2010 I had made it a personal mission to check the gluten-free status of every food I could find in the grocery store that I might want to eat…


...by 2011 I published that into my bestselling Gluten Free Diet: A Shopping Guide - a book basically filled with GF foods that we could share with family and friends.


The three things that changed our lives forever


First, we learned that it was not the food or gluten-free diet making it so hard...it was how we were thinking about it. We made it hard on ourselves...we were essentially starting from scratch all the time. 


And while not every food is gluten-free...A LOT are! It is hard at first to find the right GF foods...the best choices...BUT we figured out that if we just write things down and keep track of it...if we do this with a purpose...then very soon we knew exactly what we wanted/needed every time we go to the store.


Finally, we were the ones holding our child back...ourselves back... from being more social. No one was forcing us. And once we started getting out there...then we discovered how to make it work. Little ideas here and there that made life SOOO much easier. It put us in a great situation with daycare and getting our kids into normal "kid" life again.


It was a steep learning curve...but after "getting it" we felt pretty confident that we could handle just about any situation with gluten-free.


Transformation


These days, we walk through the grocery store with total confidence knowing exactly what foods we are looking for and where to find them…


We join friends and family for barbecues, holiday parties, and birthdays without worrying about what to do…


Life is pretty normal if there is such a thing.


Our kids participate in sleepovers...they go to sleep away camps, backpacking trips, and school outings without fear of getting gluten. 


When a new friend from school offers our daughter something she’s not sure is GF, it’s ok! She has the confidence to say no without making it weird…


I guess what we really wanted when we started out on this gluten-free diet was for our daughter to just have a normal life…


...to experience everything with her friends

...to develop her own identity without being defined by her diet
