In September, while in Crested Butte, Colorado, we had a wonderful gluten free pizza crust at the Brick Oven Pizzeria. Talking with the waiter, we learned that it was made by Completely Gluten Free, a local company offering a range of gluten free baked goods. So we set about learning more!
Several weeks ago Chris Fiala, the company’s owner, met up with me to share her story and, lucky for me, product samples. I found her very knowledgeable about how different gluten flours influence the taste and texture of final products and her willingness to share her insights endearing. It makes me happy to be able to endorse a company that has such a solid individual running it.
Now for the food:
We were most excited to try the pot stickers/dumplings. We used to love making/eating pot stickers prior to our daughter’s diagnosis but have not had any since because of the difficulty finding gluten free wrappers (yes, we should and will try out a homemade recipe soon). Completely Gluten Free’s dumplings come six to a package and can go straight from the freezer to the pan. These vegetarian dumplings were so tasty, we wished we had more! (And order more we will!)
We also really loved the chocolate chip cookie and the buttermilk biscuits mixes. The chocolate chip cookies (pictured here) came out fluffy and moist without extra effort where many gluten free cookies spread out flat. The biscuits were also fluffy. Great out of the oven or the next day with cheese and ham in the middle for a breakfast sandwich.
We also tried Completely Gluten Free’s granola (great on yogurt), pancake mix, gnocchi and, of course, pre-made pizza crusts. All were very tasty with almost a gourmet edge. The pizza crusts we ordered had egg so were fluffier than the vegan thin crust style we had at Brick Oven.
This is definitely a company that gets the Happy Gluten Free seal of approval and we look forward to continuing to use their products and try additional ones.
